Pavan Group, leading company in pellet snacks technology as well as breakfast cereals, baby foods and pasta technology, has recently participated to EXTRUSION PLATFORM AMERICAS 2012  – 6th Practical Short Course, incl. Pilot Demonstration Sessions: Extrusion Technology in Food Processing and Product Formulation, which took place on October 29th and 30th, 2012,  in cooperation with CIGI, Canadian International Grains Institute – Winnipeg, Manitoba, Canada. It was another momentous opportunity to reaffirm Pavan’s innovation capability in the food industry.

Luciano Mondardini’s lecture dwelt on three topics: a general introduction on pellet snacks technology, an overview of the innovation opportunities offered by pellet snacks in the growing fat-free snacks sector and he finally focused on stackable chips production technology.

The lecture on the innovation opportunities which are available with the pellet snacks technology, provided participants with a comprehensive review of the wide range of solutions, in terms of shapes and formulations, offered by pellet-based snacks in the low-fat or fat-free sectors. Introducing a wider variety of raw materials to meet nutritional needs and offer very good  bite products is relatively easy.

This advantage is matched by the wide range of shapes that are suitable for snacks, breakfast cereals and ‘cross over’ products. This somehow new category is surely most interesting as it opens to product concepts which have rarely been considered so far, including popped cakes, air expanded pellets and some types of direct expanded products.
