Capitani gnocchi machine

The wide range of products made by Capitani, a well-know company from Lomazzo (Como, Italy), which produces machinery for pasta makers, not only includes various models of dough sheeters, sheet cutters and pasta forming machines for double-sheet cappelletti and ravioli, but also an interesting continuous-feed gnocchi machine for making gnocchi out of potatoes or gnocchi mixes.
This gnocchi machine is available in two versions:
• the GN2 model, with a production capacity of up to 80 kg/hour;
• the GN6 model, with a production capacity of up to 220 kg/hour.
The gnocchi forming unit is able to produce both smooth and grooved gnocchi and is fitted with an automatic flouring unit for dosing the rice flour during processing.
Thanks to an inverter it is possible to regulate the speed for both worm screw feed and cutting blade rotation, making it quick and easy to determine the length of the gnocchi produced.
One of the special features which makes Capitani gnocchi machines particularly popular on the market, is without doubt the fact that the gnocchi forming block can be changed over incredibly quickly so that different formats, such as chicche (very small gnocchi), can be made using the same machine. Changing over the forming block is so quick and easy: simply undo two screws.
This characteristic also facilitates and improves cleaning and sanitizing operations: the gnocchi forming block can be removed from the machine and washed under running water or in a dishwasher, together with the funnel and worm screw.
For continuous operation, the gnocchi machines are fitted with a side conveyor which can safely feed the worm screw with no need to open the safety cover installed on it.
In the GN6 version, the reduction gear and the motor are installed at the top of the machine to guarantee better anchoring of the worm screw and greater stability during operation. Positioning of the mechanical parts above the worm screw also eliminates problems caused by bits of dough filtering down into mechanical parts installed below it, thus avoiding any need to replace the reduction gear which over time can be damaged as a result of product residues falling into it.
