The pasta school “Primo Piatto” is launching a new advanced course for professional pasta makers: The advanced pasta maker – gluten free and alternative flours.
The course is aimed at all professionals in the world of pasta who wish to explore the world of products for consumers with problems of food intolerance or, more generally, get detailed information and operational tips about different flours alternative to traditional wheat flours.
Topics range from theoretical and nutritional aspects to manufacturing and regulatory requirements, not forgetting economic and practical information to be immediately implementated in existing businesses.
The course is organized in three days of seven hours, with moments of classroom, practical production and cooking tests, and tasting of the products obtained.
