University Research at the Center of the Science & Innovation Day of Fiera Pastaria & Festival

Research on fresh pasta will take center stage at the Science & Innovation Day, the opening day of the Pastaria Festival, part of Fiera Pastaria & Festival 2026 (Florence, Stazione Leopolda, March 30–31).

The academic conference “Fresh Pasta: Product, Process and Preservation” will bring together researchers and experts to discuss the most recent innovations in the sector.

Among the topics to be addressed: nutritional fortification, stabilization technologies, innovative packaging, and market responses to new formulations.

Once registration is completed, participants will receive an entry pass granting access both to the Fiera Pastaria exhibition area—dedicated to suppliers of technologies, ingredients, services, and packaging for the pasta industry—and to the conferences and meetings of the Pastaria Festival, scheduled for March 30–31, 2026, at Stazione Leopolda in Florence.
